Christmas Cookie Recipe!

Hello everyone! What’s more Christmassy than baking cookies? I have a ton of memories from when I was little making these cookies with my mom and sister. They’re super easy and absolutely delicious. Makes about 3 dozen.

You will need:
-2 2/3 cups all purpose flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-1 cup unsalted butter (softened)
-3/4 cup sugar
-3 large egg yolks
-2 teaspoons vanilla extract

Start off by taking a medium bowl and whisking flour, baking powder and salt until they’re blended. Then with an electric mixer, beat butter and sugar in a large bowl until the mixture is light and fluffy. Mix in the egg yolks and vanilla and then stir in the flour mixture. I would suggest using your hands to quickly make sure it’s all nice and mixed at the very end before we move on.

Divide the dough into four equal portions and flatten then wrap them and chill until firm. I left it to chill for about 45 minutes to an hour. (I’d recommend watching a Christmas movie while waiting for the dough to chill!)

Preheat the oven to 350 degrees and line your baking sheets with parchment paper. Roll out one part of the dough onto a floured surface to about 1/4 inch thickness. Cut out the cookies with your favourite holiday shapes. Gather the rest of the dough, reroll and cut out more cookies and transfer to baking sheets. Decorate the cookies however you want with sprinkles or even food colouring. Bake until golden brown at the edges, for about 12 minutes. Repeat with all the other sections of dough and you’re done!

These are super easy to make and are really great to do with young kids because who doesn’t love adding sprinkles and decorating! What’s your favourite cookie recipe? Thanks so much for stopping by!
